Instructions

  1. In a medium bowl, whisk together the all-purpose flour, baking soda, and salt. Set aside.
  2. In a large bowl, using an electric mixer, cream together the softened unsalted butter, light brown sugar, and ¼ cup granulated sugar until light and fluffy, about 2-3 minutes.
  3. Beat in the egg and vanilla extract until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix.
  5. Cover the dough and chill in the refrigerator for at least 30 minutes, or up to 2 hours. This helps prevent spreading and enhances chewiness.
  6. Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
