This comforting soup transforms the classic Chicken Cordon Bleu into a rich, creamy bowl. Tender pieces of chicken and savory turkey ham are suspended in a velvety cheese sauce, topped with golden, bubbly Swiss cheese and crisp croutons. A hint of Dijon mustard and fresh thyme brightens the robust flavors, creating a satisfying and elegant meal.

Ingredients

Scale
  • 2 tablespoons unsalted butter
  • 1 cup yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 4 cups chicken broth
  • 1 1/2 cups heavy cream
  • 2 cups cooked chicken breast, shredded or diced
  • 1 cup cooked turkey ham, diced
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • Pinch of ground nutmeg
  • 1 1/2 cups shredded Swiss cheese, divided
  • 1 cup croutons or crusty bread cubes
  • Fresh thyme sprigs, for garnish

Instructions

  1. Melt butter in a large Dutch oven or heavy-bottomed pot over medium heat. Add the diced onion and cook until softened, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.
  2. Sprinkle the flour over the onion and garlic, stirring constantly for 1-2 minutes to create a roux.
  3. Gradually whisk in the chicken broth until smooth, ensuring no lumps remain. Stir in the heavy cream and bring the mixture to a gentle simmer, stirring occasionally, until it begins to thicken slightly, about 5-7 minutes.
  4. Stir in the cooked chicken, diced turkey ham, Dijon mustard, salt, black pepper, and nutmeg. Continue to simmer for 5-7 minutes, allowing the flavors to meld.
  5. Preheat your broiler to high. Ladle the hot soup into individual oven-safe bowls. Top each serving with croutons and a generous amount of the remaining shredded Swiss cheese.
  6. Carefully place the bowls under the preheated broiler for 2-4 minutes, or until the cheese is melted, bubbly, and golden brown. Watch closely to prevent burning.
  7. Garnish each bowl with fresh thyme sprigs before serving immediately.

Notes

For a quicker preparation, use pre-cooked rotisserie chicken.

Gruyère or Emmental cheese can be used as a flavorful alternative to Swiss cheese.

Ensure your serving bowls are certified oven-safe before placing them under the broiler.

This soup can be prepared a day in advance and reheated gently on the stovetop. Add a splash of chicken broth or cream if it becomes too thick upon reheating.
