  • 1 (15.25 ounce) box white or yellow cake mix
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 (8 ounce) package cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup milk or heavy cream
  • 4 cups fresh strawberries, hulled and sliced (divided)
  • 1/4 cup powdered sugar, for dusting (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish.
  2. Spread half of the sliced strawberries evenly over the bottom of the prepared baking dish.
  3. In a medium bowl, beat the softened cream cheese with granulated sugar and vanilla extract until smooth. Gradually beat in the milk or heavy cream until the mixture is light and creamy.
  4. Carefully spoon dollops of the cream cheese mixture over the strawberries in the baking dish.
  5. Sprinkle the dry cake mix evenly over the cream cheese layer.
  6. Pour the melted butter evenly over the dry cake mix.
  7. Bake for 45-55 minutes, or until the top is golden brown and a toothpick inserted into the cake portion comes out clean.
  8. Remove from oven and let cool completely on a wire rack. Once cooled, refrigerate for at least 2 hours, or preferably overnight, to allow the cheesecake layer to set.
  9. Before serving, top with the remaining fresh sliced strawberries and a light dusting of powdered sugar, if desired.
