Ingredients

Scale
  • 1 cup (226g) unsalted butter, softened
  • 1/2 cup (60g) powdered sugar, plus more for dusting
  • 1 teaspoon vanilla extract
  • 1 3/4 cups (210g) all-purpose flour
  • 1/4 cup (30g) cornstarch
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter and 1/2 cup powdered sugar until light and fluffy, about 2-3 minutes.
  3. Beat in the vanilla extract until well combined.
  4. In a separate medium bowl, whisk together the all-purpose flour, cornstarch, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined and a soft dough forms. Do not overmix.
  6. Roll the dough into small, 1-inch balls and place them about 1 inch apart on the prepared baking sheet.
  7. Bake for 10-12 minutes, or until the edges are lightly golden. The cookies should still be pale in the center.
  8. Remove from the oven and let cool on the baking sheet for 5 minutes.
  9. While still warm, gently roll or dust the cookies generously with additional powdered sugar.
  10. Transfer to a wire rack to cool completely. Dust again with powdered sugar if desired before serving.

Notes

Ensure your butter is at true room temperature for optimal creaming and a smooth dough.

Do not overmix the dough once the flour is added to prevent tough cookies.

Sift the powdered sugar for dusting to achieve a smooth, even coating.

For best results, bake one sheet at a time to ensure even cooking.

Store cookies in an airtight container at room temperature for up to one week.
