Tender fusilli pasta is cooked directly in a rich, creamy sauce infused with savory ranch seasoning and sharp white cheddar cheese.   • 1 pound chicken or turkey sausage, casings removed, crumbled or sliced
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth, low sodium
  • 1 cup milk, whole or 2%
  • 12 ounces fusilli or rotini pasta
  • 2 tablespoons ranch seasoning mix
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 4 ounces cream cheese, softened, cut into cubes
  • 1.5 cups shredded white cheddar cheese
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Heat olive oil in a large, deep skillet or Dutch oven over medium-high heat. Add the sausage and cook, breaking it up with a spoon, until browned and cooked through. Remove sausage from the pan and set aside, leaving any rendered fat.
  2. Add the diced onion to the pan and cook until softened, about 3-5 minutes. Add the minced garlic and cook for another minute until fragrant.
  3. Pour in the chicken broth and milk. Bring the mixture to a simmer.
  4. Add the fusilli pasta, ranch seasoning, black pepper, and red pepper flakes (if using). Stir well to combine.
  5. Reduce heat to medium-low, cover the pan, and cook for 12-15 minutes, or until the pasta is al dente and most of the liquid has been absorbed, stirring occasionally to prevent sticking.
  6. Stir in the softened cream cheese until melted and smooth. Then, gradually add the shredded white cheddar cheese, stirring until fully melted and the sauce is creamy.
  7. Return the cooked sausage to the pan and stir to combine.
  8. Remove from heat, stir in the fresh parsley, and serve immediately.

For a richer sauce, consider using half-and-half or heavy cream instead of milk.

Adjust ranch seasoning to taste, as saltiness can vary between brands.
