  • 1/2 cup (110g) packed light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup (250g) creamy peanut butter
  • 1 1/4 cups (150g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. Stir in the creamy peanut butter until fully incorporated.
  5. In a separate medium bowl, whisk together the all-purpose flour, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  7. Roll the dough into 1-inch balls. Roll each ball in granulated sugar to coat evenly.
  8. Place the sugared dough balls onto the prepared baking sheets, about 2 inches apart.
  9. Using a fork, gently press down on each cookie dough ball in a crisscross pattern.
