This Creamy Beef and Potato Noodle Skillet is a hearty and comforting dish. Tender egg noodles, browned ground beef, and soft potatoes are enveloped in a rich, creamy sauce. Garnished with fresh chives, this skillet is a satisfying meal.

Ingredients

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 pound potatoes, peeled and cubed
  • 1 cup egg noodles
  • 1/2 cup heavy cream
  • 2 tablespoons butter
  • 2 tablespoons flour
  • Salt and pepper to taste
  • Fresh chives, chopped, for garnish

Instructions

  1. In a large skillet, brown the ground beef over medium-high heat. Drain any excess fat.
  2. Add the olive oil, chopped onion, and minced garlic to the skillet. Cook until the onion is softened, about 5 minutes.
  3. Pour in the beef broth, and stir in the dried thyme and dried rosemary. Bring to a simmer.
  4. Add the cubed potatoes to the skillet. Cook until the potatoes are tender, about 15 minutes.
  5. Stir in the egg noodles and cook until they are tender, about 8-10 minutes.
  6. In a small saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute to create a roux.
  7. Gradually whisk in the heavy cream until the sauce is smooth and thickened.
  8. Pour the cream sauce into the skillet with the beef, potatoes, and noodles. Stir to combine.
  9. Season with salt and pepper to taste.
  10. Garnish with fresh chives before serving.

Notes

Add a splash of Worcestershire sauce for extra depth of flavor

For a thicker sauce, simmer for a few more minutes
