  • 4 cups corn kernels, fresh, frozen (thawed), or canned (drained)
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream or plain Greek yogurt
  • 1/4 cup finely diced red onion
  • 1/4 cup chopped fresh cilantro or parsley
  • 2 tablespoons grated Parmesan cheese (optional)
  • 1 teaspoon sugar
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt to taste
  • Black pepper to taste
  • Pinch of cayenne pepper or paprika (optional)

Instructions

  1. If using frozen corn, thaw completely and drain any excess liquid. If using canned corn, drain thoroughly. If using fresh corn, blanch or steam until tender, then cut kernels from the cob and cool.
  2. In a large mixing bowl, combine the corn kernels, diced red onion, and chopped fresh cilantro or parsley.
  3. In a separate small bowl, whisk together the mayonnaise, sour cream (or Greek yogurt), Parmesan cheese (if using), sugar, garlic powder, onion powder, salt, black pepper, and cayenne pepper (if using) until smooth.
  4. Pour the dressing over the corn mixture. Stir gently until all ingredients are well combined and the corn is evenly coated.
  5. Taste and adjust seasonings as needed. For best flavor, cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld before serving.

Notes

For an extra smoky flavor, grill or roast fresh corn before cutting off the kernels.

This salad can be made ahead of time and stored in the refrigerator for up to 3 days.
