These no-bake chocolate oatmeal bars offer a delightful combination of textures and flavors. A chewy, wholesome oatmeal base is complemented by a smooth, rich chocolate topping, finished with an elegant chocolate drizzle. The bars present a balanced sweetness, with the deep cocoa notes harmonizing with the comforting taste of oats. Prepared without baking, they achieve their firm yet tender consistency through chilling, making them a convenient treat.

  • For the Oatmeal Base:
  • 1/2 cup unsalted butter
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1/2 cup milk (dairy or non-dairy)
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 3 cups old-fashioned rolled oats
  • For the Chocolate Topping:
  • 1 cup semi-sweet chocolate chips
  • 1/4 cup creamy peanut butter (or almond butter)
  • 1 tablespoon unsalted butter

Instructions

  1. Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a medium saucepan, combine the 1/2 cup unsalted butter, granulated sugar, brown sugar, milk, and cocoa powder. Bring the mixture to a rolling boil over medium heat, stirring constantly.
  3. Once boiling, remove the saucepan from the heat. Stir in the vanilla extract and salt.
  4. Add the rolled oats to the saucepan and mix thoroughly until all the oats are evenly coated with the chocolate mixture.
  5. Press the oatmeal mixture firmly and evenly into the prepared baking pan. Use the back of a spoon or a spatula to ensure a compact layer.
  6. For the chocolate topping, combine the chocolate chips, peanut butter, and 1 tablespoon unsalted butter in a microwave-safe bowl. Microwave in 30-second intervals, stirring after each, until smooth and melted. Alternatively, melt over a double boiler.
  7. Pour the melted chocolate topping over the oatmeal base in the pan and spread it evenly.
  8. If desired, drizzle a small amount of extra melted chocolate over the top for decoration.
  9. Refrigerate the bars for at least 2 hours, or until completely set.
  10. Once firm, use the parchment paper overhang to lift the bars from the pan. Cut into 16 squares and serve.

Notes

Ensure the oatmeal mixture is pressed very firmly into the pan to prevent crumbling when cut.

For a richer chocolate flavor, use dark cocoa powder in the base.

Store leftover bars in an airtight container in the refrigerator for up to one week.

For a nut-free version, substitute sunflower seed butter for peanut butter in the topping.
