These tuna melt patties offer a delightful combination of textures and flavors. Flaky, savory tuna is blended with creamy mayonnaise and sharp cheddar cheese, then encased in a golden, crispy breadcrumb crust. Each patty is pan-fried to perfection, resulting in a warm, tender interior with a satisfyingly gooey cheese melt, finished with a sprinkle of fresh chives.

Ingredients

Scale
  • 2 (5 ounce) cans tuna in water, drained
  • 1/2 cup mayonnaise
  • 1/2 cup shredded cheddar cheese
  • 1 large egg, lightly beaten
  • 1 tablespoon fresh chives, chopped, plus more for garnish
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • Salt to taste
  • Freshly ground black pepper to taste
  • 1 cup panko breadcrumbs
  • 23 tablespoons vegetable oil for frying

Instructions

  1. Prepare Tuna Mixture: In a medium bowl, combine the well-drained tuna, mayonnaise, shredded cheddar cheese, beaten egg, chopped chives, Dijon mustard, onion powder, garlic powder, salt, and pepper. Mix gently until all ingredients are well incorporated.
  2. Form Patties: Place the panko breadcrumbs in a shallow dish. Divide the tuna mixture into 4-6 equal portions and gently form each into a patty, about 1-inch thick. Carefully dredge each patty in the breadcrumbs, pressing lightly to ensure an even coating on all sides.
  3. Cook Patties: Heat the vegetable oil in a large non-stick skillet over medium heat. Once the oil is hot, carefully place the patties into the skillet, ensuring not to overcrowd the pan. You may need to cook them in batches.
  4. Fry until Golden: Cook for 4-6 minutes per side, or until the patties are golden brown and heated through, and the cheese inside is melted and gooey.
  5. Serve: Remove the patties from the skillet and place them on a plate lined with paper towels to drain any excess oil. Garnish with additional fresh chives before serving warm.

Notes

For an extra crispy crust, using panko breadcrumbs is recommended.

Ensure the tuna is very well-drained to prevent soggy patties.

These patties can be air-fried at 375°F (190°C) for 10-12 minutes, flipping halfway, until golden brown. Lightly spray with oil before air frying.

Serve these patties on their own, in a bun, or alongside a fresh green salad for a complete meal.

Leftover patties can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet or air fryer for best results.
