  • 1 cup shredded mozzarella cheese

  • Pinch of red pepper flakes (optional)
  • Fresh parsley, chopped, for garnish

Instructions

  1. Spread softened butter evenly on one side of each slice of sourdough bread.
  2. Place one slice of bread, butter-side down, in a non-stick skillet over medium-low heat.
  3. Layer half of the shredded mozzarella cheese onto the bread in the skillet.
  4. Evenly spread the pizza sauce over the cheese, then sprinkle with garlic powder, dried oregano, and red pepper flakes if using.
  5. Top with the remaining shredded mozzarella cheese.
  6. Place the second slice of bread on top, butter-side up.
  7. Cook for 3-5 minutes per side, or until the bread is golden brown and the cheese is fully melted and gooey. Adjust heat as needed to prevent burning.
  8. Carefully remove the grilled cheese from the skillet, slice in half, and garnish with fresh chopped parsley before serving.

Use a good quality, low-moisture mozzarella for the best melt.
