  1. Prepare the pie crust: In a large bowl, whisk together flour and salt. Cut in cold butter using a pastry blender or your fingertips until pea-sized crumbs form. Gradually add ice water, mixing until the dough just comes together. Form into a disc, wrap tightly, and chill for at least 30 minutes.
  2. Preheat oven to 375°F (190°C). On a lightly floured surface, roll out the chilled dough into a 12-inch circle. Carefully transfer the dough to a 9-inch pie plate. Trim and crimp the edges as desired.
  3. Prepare the filling: In a medium bowl, whisk together granulated sugar, flour, and salt until well combined.
  4. In a separate bowl, whisk together heavy cream, whole milk, and vanilla extract.
  5. Gradually add the wet ingredients to the dry ingredients, whisking continuously until the mixture is smooth and lump-free. Stir in the melted butter.
  6. Pour the prepared filling into the pie crust.
  7. Bake for 45-55 minutes, or until the edges of the filling are set but the center still has a slight jiggle when gently shaken. The top should be lightly golden.
