This Deviled Egg Macaroni Salad combines two classic dishes into one satisfying side. Tender elbow macaroni is tossed in an exceptionally creamy and tangy dressing inspired by the flavors of deviled eggs. The salad is enriched with chopped hard-boiled eggs, providing a pleasant texture and savory depth. A hint of Dijon mustard, a touch of sweetness, and a sprinkle of paprika complete this simple yet flavorful dish, making it a perfect accompaniment for gatherings and meals.

  • 8 ounces elbow macaroni
  • 6 large eggs, hard-boiled and peeled
  • 1 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon white vinegar
  • 1 teaspoon granulated sugar
  • 1/2 cup celery, finely chopped
  • 1/4 cup red onion, finely chopped
  • 1/4 teaspoon salt, or to taste
  • 1/8 teaspoon black pepper, or to taste
  • Paprika, for garnish
  • Fresh dill, for garnish (optional)

Instructions

  1. Cook the macaroni according to package directions until al dente. Drain and rinse with cold water to cool it down quickly and stop the cooking process. Set aside.
  2. Slice two of the hard-boiled eggs in half and set aside for garnish. Chop the remaining four eggs.
  3. Separate the yolks from two of the chopped eggs and place them in a large mixing bowl. Mash the yolks with a fork until they form a fine crumble.
  4. To the mashed yolks, add the mayonnaise, Dijon mustard, white vinegar, sugar, salt, and pepper. Whisk until the dressing is smooth and creamy.
  5. Add the cooked macaroni, all the chopped eggs (the remaining whites and the two whole chopped eggs), celery, and red onion to the bowl with the dressing.
  6. Gently stir everything together until the macaroni and other ingredients are evenly coated.
  7. Cover the bowl and refrigerate for at least 1 hour to allow the flavors to meld.
  8. Before serving, gently stir the salad again. Garnish with the reserved sliced hard-boiled eggs, a sprinkle of paprika, and fresh dill if desired.

Notes

Rinse the cooked pasta under cold water to prevent it from becoming gummy.

For the best flavor, allow the salad to chill for at least one hour before serving.
